Schooner Bar Review: The Bar RCL's CEO Said He'd Be Fired for Removing

We found it by accident the first night — walked past on the way back from dinner and heard someone playing Billy Joel's "Piano Man," which felt almost too on the nose. But the room was warm and half-full and there were two empty stools at the bar, so we sat down. We didn't leave for two hours. That's what Schooner Bar does. On Brilliance of the Seas, the Radiance-class version is wider than on newer ships, with big windows on one side and enough room that it doesn't feel cramped when the crowd builds after 9 PM.

Food & Drinks

The drink menu is more interesting than the bar's casual reputation suggests. The menu was overhauled in September 2025 — nearly the entire old Hemingway-inspired cocktail list was replaced. The Lavender Daiquiri survived as the lone holdover and fan favorite. The new Schooner-exclusive cocktails include the Desert Pear Margarita, the Toasted Marshmallow Old Fashioned (ask whether they have Buffalo Trace — some ships substitute Jack Daniel's early in the sailing), and the Parrot Punch. At $14 each plus gratuity, they're standard cruise pricing and covered by the Deluxe Beverage Package. This isn't a cocktail-forward craft bar; it's a place where the drinks are good enough and the music is the real draw.

Service

The bartenders here tend to be lifers — they've worked this concept across multiple ships and they know the rhythm of the room. Ours remembered our drinks by the second night without asking. Between sets, they'll chat about where the ship's been or which port is worth skipping. The waiters circulate through the crowd during piano sets so you don't lose your seat.

Atmosphere / Ambiance

Canvas sails draped from the ceiling. Rope rigging. Wooden ship models in glass cases. Plank flooring that creaks when the ship rolls. Oil paintings of clipper ships. It looks like a 19th-century schooner's wardroom, and it has since the first one opened in the 1970s. During the day, it's a quiet spot for trivia and crossword games — low-key enough to read a book. After dinner, the pianist starts and the room transforms. By 10 PM on sea nights, it's standing room and singalongs, and strangers are buying each other rounds. On the mega-ships — Utopia, Icon — the bar is smaller and can get drowned out by the noise from nearby decks. The Radiance and Freedom-class versions are where the magic is strongest.

Conclusion

Rating: 4.5/5 — The heart of the ship, if you find it at the right hour. Royal Caribbean's CEO has literally said he'd fire anyone who proposed removing it. That tells you what this bar means to the fleet. It's not the most photogenic venue or the trendiest — it's the one where you end up on the last night of the cruise, surprised that you're sad to leave. The smaller, older ships do it best.

• Arrive by 8:30 PM for a seat — after 9 PM on sea days it's standing room
• Request a song early; the pianist queues them and popular ones fill up fast
• On Radiance-class ships, grab the window seats — you get piano music and moonlit ocean simultaneously
• Afternoon trivia at the Schooner is less crowded than the main trivia in the theater — smaller groups, better chance of winning
